Yield

  • 6-8 servings

Ingredients

  • 3 very ripe bananas, mashed

  • 3/4 cup granulated sugar

  • 1/2 cup dark brown sugar, lightly packed

  • 1/2 cup vegetable oil

  • 2 extra-large eggs, at room temperature

  • 1/2 cup sour cream

  • 1 teaspoon pure vanilla extract

  • 2 cups all purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon kosher salt

  • Francine’s Outrageous Toffee Sauce with Bourbon® & Ice Cream for serving

Directions

  • Preheat oven to 350 degrees.

  • Grease and flour a 9 by 2-inch round cake pan.

  • In the bowl of an electric mixer fitted with the paddle attachment, mix the bananas, granulated sugar, and brown sugar on low speed until combined.

  • With the mixer still on low, add the oil, eggs, sour cream, vanilla. Mix until smooth.

  • In a separate bowl, sift together the flour, baking soda, and salt.

  • With the mixer on low, add the dry ingredients and mix just until combined.

  • Pour the batter into the prepared pan and bake for 45-50 minutes, until a toothpick inserted in the center comes out clean.

  • Cool in the pan for 15 minutes, turn out onto a cooling rack, cool completely.

  • Serve with Francine’s Outrageous Toffee Sauce with Bourbon®
