Mamas famous apple cake with outrageous toffee sauce with bourbon

Yield

  • 6-8 servings

Ingredients

  • 1 stick of butter, softened, plus additional soft butter for pan

  • 1 cup sugar

  • 2 large eggs

  • 2 cups flour

  • 1 tbs. cinnamon (or more, depending on taste)

  • 1 tsp. baking powder

  • 1 1/2 tsp. baking soda

  • 1 tsp. vanilla

  • 6-8 apples (depending on size), peeled and sliced. Note: Use a variety like Empire, Macoun, Granny Smith for the best taste

Directions

  • Preheat oven to 350° - place rack in middle of oven

  • Butter a 9” x 3” cake pan, set aside

  • Cream butter and sugar together in the bowl of a stand mixer or with a hand mixer

  • Add eggs and beat until light and fluffy

  • Sift together flour, cinnamon, baking powder, and baking soda and beat in thoroughly

  • Stir apples into batter using a wooden spoon, which will be thick and hard to stir at first

  • Turn into buttered pan and spread smooth

  • Bake for one hour, or until toothpick comes out clean

  • Cool for 10 minutes, then use a plate to invert cake from pan and place on a cake stand or pretty serving plate
